Smoking cabinet series 135
The 135 series smoker has been delighting customers for decades with excellent and consistent smoking results.
The oven casing is equipped with 50mm insulation, and the door with 40mm insulation.
- Available in two sizes:
135/15 - Height 150cm for approximately 150 fish or approximately 100kg of meat
135/20 - Height 200cm for approximately 200 fish or approximately 150kg of meat
The standard version of the smokers is equipped with insertion brackets on the left and right sides of the inner wall, onto which hanging or support racks can be inserted and rested. The 135/20 model is only available with a trolley!
For more efficient operation, the smokers can also be ordered in a version for loading with a trolley, without insertion brackets in the casing, but with a ramp for the trolley.
The oven can optionally be equipped with a circulating fan.
The ovens have three heating coils with a total output of 6 kW. These are located approximately 10 cm above the interior floor and are protected by a drip tray above them.
Switch "Heating 1" switches on the middle 2 kW heating coil.
Switch "Heating 2" switches on the outer 2 kW heating coils, and when switches "Heating 1" and "Heating 2" are switched on, a total of 6 kW of heat is available.
The smoking wood tray is positioned on one of the operating heating coils to generate smoke.
The thermostat sets the temperature between 30°C and 100°C. The built-in timer, with a maximum setting time of 120 minutes, automatically shuts off the oven.

Cold smoking with 135 series smokers:
Cold smoking requires an external smoke generator and a smoke pipe connection between the external smoke generator and the smoker. 135 series smokers come standard with a cold smoke connection piece for this purpose. The smoke pipe connection can be composed of three bends and two pipes, as shown in the illustration above. You can purchase the corresponding pipes as a set under Smoke Pipes (Item No.: 3000001660). The diameter of the pipes for connecting to 135 series smokers is 120 mm. The external smoke generator functions like a small electric smoker with a thermostat. The smoke cools in the pipes on its way to the smoker, ensuring that the food being smoked only comes into contact with cold smoke. The temperature set on the thermostat of the external smoke generator influences the intensity of the smoke development. A higher temperature results in more smoke development, a lower temperature correspondingly less smoke development. The speed at which the smoke is drawn out is influenced by the opening of the air supply. This also influences the time it takes for the smoke to come into contact with the food being smoked. Therefore, the following applies to both hot and cold smoking: If the air outlet on the smoker is too large, a smoke control slider (Art. No. 4100001007) can be installed on the smoke pipe connection to interrupt the air outlet.
